Dark Chocolate Cookies

 

Ok, I have been searching, experimenting, and greatly needing the most tasty, most healthy cookie recipe out there and can proudly say, you will most likely agree this is it! It is loaded with nuts (flour) so keep in mind if you eat dozens, it’s basically like ingesting a bag of trail mix 😉

PREHEAT

Preheat oven to 350F. Line a baking sheet with silpat or parchment paper

MIX

In a food processor pulse the 2 cups of pecans till they are small course crumbs then add remaining dry ingredients, then wet ingredients.

2 C pecan meal

2 C blanched almond flour

1 t baking soda

3/4 t sea salt

1/2 t cinnamon

1/2-1t liquid stevia or 1/4 C coconut sugar

2 eggs

2 t vanilla

SLOW POUR

Pour in 2/3 C melted coconut oil in parts and mix till desired consistency. Add more if necessary (if using liquid stevia, less coconut oil is needed, but you want dough to be quite oily)

FOLD IN

Fold in 3/4-1 C dark chocolate chips – I love the Trader Joe’s brand organic dark chocolate bar (purple wrapper) chopped into chunks OR if you like a little sweeter chip, use the Enjoy Life semi sweet chips. Both chocolates are dairy and soy free!

FORM

Form dough into heaping tablespoon balls (can press down if you desire a flatter cookie shape over a ball shape).

BAKE

Bake approx 12 minutes. Cookies should be slightly firm to the touch and golden on the edges. Your life is now changed.
