This simple dessert is one of my favorite treats on planet earth! I finally made my own version using Enjoy Life Chocolate so that I could enjoy a dairy and soy FREE version of the classic frozen banana. BEST one I’ve ever had. Truly.
Peel, stab, & freeze
Peel 4 ripe bananas, poke carefully with a cake pop stick or popsicle stick, place side by side in a ziplock and let completely freeze (do this the night before).
MELT
(On very low heat)
3/4 C Enjoy Life Chocolate Chips
1/4 C Coconut Oil
then stir in 1 T Vanilla
DIP
Pull bananas out of freezer and dip into saucepan one at a time, using a spatula to help slather with an even chocolate ganache coating.

IMMEDIATELY roll dipped bananas into toppings of choice, I used chopped organic raw almonds in the photo above, but pecans may be my personal favorite.
